Cheddar Broccoli Soup

Ingredients:

1 head broccoli
1 head cauliflower
4 medium potatoes
1/2 onion chopped
2 cups half & half
2 cans chicken broth
2 tablespoons butter
2 tablespoons flour
12 oz. velveeta

Cook vegetables and set aside.
Melt butter, add flour and combine to make paste. Whisk in half & half and broth. Boil until desired thickness. Add velveeta until melted.(I cut the cheese into small cubes so it melts quicker.) Add vegetables and cook over medium/low heat until nice and hot!
*Enjoy!
(frozen vegetables work great for this recipe and are usually more cost friendly in the winter time when they are not in season)
