Ingredients:
2 tablespoons butter
1 onion, chopped
4 garlic cloves, minced
6 2/3 cups water
8 teaspoons chicken bullion
1/2 bunch cilantro, chopped
2 teaspoons cumin
2 small cans diced green chilies
1 tablespoon lime juice
1/2 teaspoon pepper
3 cups rice
1. In a sauce pan saute butter onion and garlic.
2. In a large pot, bring the following to a boil: water, chicken bullion, cilantro, cumin, green chilies, lime juice, peppers, and rice.
3. Add onion and garlic mixture to rice and cook at a simmer until done. (Add more water if needed)
This recipe feeds a crowd, so I usually half it. There's usually still leftovers but I love to have left overs for lunch the next day!
