Island Pork Tenderloin

Ingredients:

16oz pork tenderloin
1/2 tsp salt
1/2 tsp pepper
1/2 tsp chile powder
1/2 tsp ground cumin
1/2 tsp cinnamon
2 tsp olive oil
1/4 cup brown sugar
1/2 tablespoon fresh garlic, finely chopped
1/2 tablespoon Tabasco sauce/Louisiana crystal sauce

1. Preheat oven to 350 (you can also use your grill)
2. Stir together salt, pepper, cumin, chile powder, and cinnamon, then coat pork with the spice rub.
3. Heat oil in a skillet over moderately high heat and brown pork on all sides.
4. Place pork in roasting pan if you're cooking in oven or on a piece of tinfoil if cooking on the grill. While the pork cooks, stir together brown sugar, garlic, and hot sauce. Pat onto the top and sides of the tenderloin a little while before the pork finishes cooking. Cook pork until the middle registers 160-165 degrees on a meat thermometer. Let meat rest 5 minutes before slicing .
